Orange Dream Cookies

This day is a day for catching up with my boys. Only a few weeks until The Monkey Man moves into his own place with his own people. Only a few weeks until The Bug begins eighth grade. Time to blast some baddies together. Bethesda's Doom is a riot! I highly recommend it. Rip roarin' fun.

This recipe took three Christmases to get right. I hope you love them as much as we do.

Orange Dreams with White Chocolate Chips

1 c. Unsalted Butter: Room Temperature

1/2 c. Light Brown Sugar

1/4 c. Blonde Sugar

1 Egg

2 tbl. Orange Zest

2 tsp. Orange Extract

1/2 tsp. Grand Marnier

2 c. - 2 tbl. All Purpose Flour, unsifted

1/3 c. Almond Flour

3/4 tsp. Baking Soda

1/2 tsp. Fine Red Salt

1 c. White Chocolate Chips

1/2 c. Almonds: Chopped or Slivers. I prefer skin on.

Oven at 350 degrees F.

Combine butter and sugars in medium bowl. Beat until light. Add egg, beat until creamy. 

Add orange zest, extract and Grand Marnier to butter, sugar, egg mixture. Mix by hand until all is incorporated.

In small bowl, sift together flours, baking soda and salt. Add to butter mixture.

Mix all together by hand until fully incorporated. Add chips and almonds.

Drop onto baking sheet in rounded teaspoons. We prefer these as small bite size cookies, because they are so rich.
